Hi Carol, I'm traveling. Will post when I get home. Henrie Guilhem's cookbook is truly interesting-- all kinds of anecdotes about growing up with Languedoc grand-mères. I just looked it up-- the pluriel of grand-mère, according to the Académie française, is grand-mères!! Eds. le cherche midi, shame on you!
A friend, on reading this, immediately gave me a recipe! The name? "Aubergines trompe-couillons" (eggplants to fool dummies) also known as "Aubergines façon cèpes" (eggplants cooked like porcini mushrooms). The latter recipe is in La bonne cuisine de nos grands-mères du Sud-Ouest by Henriette Guilhem, Paris, Editions le cherche-midi 2004 p.208. If anybody wants the recipe, leave a comment here and I'll post it.
